The holidays are right around the corner and that means it is time for cooler weather, hot chocolate, and Christmas lights.
At Thanksgiving last week, my sister attempted a new recipe she had found through Pinterest from Created By Diane — Gingerbread Cheesecake Bites. With only four ingredients, my sister was ecstatic that she had a quick fix dessert to spruce things up from our usual store-bought pies. These small treats were deliciously addictive. I ate at least a half dozen of them over the course of the aftenoon (yes, that is a bite mark in the photograph I posted).
This dessert will be a hit at Christmas parties, so make sure you save it!
Recipe: Gingerbread Cheesecake Bites

What You Need:
1 package gingerbread cookie dough
4 oz. cream cheese
2 cups powdered sugar
1 teaspoon vanilla
What To Do:
1. Preheat oven to 350 F
2. Roll small balls of dough and place in mini liners in mini-muffin pan.
3. Make a center in each dough ball using a spoon or your finger.
4. Mix cream cheese, vanilla, and sugar together until well-incorporated. Place one tablespoon of mixture into each center.
5. Bake 9 minutes.
